BREAKFAST INSPIRATION - VEGGIE EGGS AND FRUITS

I changed my mind about having the oats pancakes I made yesterday for breakfast. I saved it for tomorrow so i had eggs, fruits and a cup of Ginger green tea for breakfast. I just sliced some fresh Ginger in a tea cup, added a spoon of honey, a stick of cinnamon and the green tea bag, Poured water into the cup and it was ready. Endeavor to use fresh herbs in your tea and honey instead of sugar. Use coconut oil instead of the regular oil because it's healthier. It's also necessary to infuse herbs, fruits or veggies in your water for detoxification.

BANANA OATMEAL PANCAKES

I decided to share my oats pancake recipe so you can eat your pancakes but in a healthier way by using oat flour.
Ingredients - oats, banana, coconut milk but skimmed milk and any other milk will do, dried coconut flakes, coconut oil,eggs, carrots, green beans, red peppers, tomato, spring onions, onions and salt.
Method
1) Using the dry mill of your blender, blend oats to turn it into flour.
2) To make coconut milk, just blend coconut in a blender with water and sieve. You can dry the chaff or freeze it for making Smoothies, boiling meats and stocks or in your meal.
3) chop the tomato, red peppers and onions. In a pan, add a spoon of coconut oil and add the ingredients above. Cook until dry but not burned so you have to watch it closely.
4) Add chopped green beans, carrots and spring onions. Cook for a minute and take the pan off the fire. Don't over cook so you don't lose the color and some of the nutrients. Put this mixture in a bowl to cool down completely.
5) In a small plate , mash three bananas to make it easier for mixture.
6) In a bigger bowl, add two eggs, the mashed banana and coconut milk and mix with a fork or spoon. Most pancake mixture stops here but  mine doesn't.
7) Add the oats flour and mix.
8) Add the cooled down veggies to the mixture. Taste for salt before going to the pan. No sugar needed because the banana is the sweetener.
9) Now you can fry your cakes in batches. Pour little coconut oil in the pan, add a spoon or two of the batter and fry. Turn to the other side when cooked. If the spoon goes  right under then it's ready for a flip.
I made these pancakes this evening so I can store in the freezer for breakfast in the morning but I just had to have some. It tasted too good. I couldn't wait till morning to have some. Its best for breakfast though.

Snail,chicken and veggies. Very easy to prepare. Low in calories and healthy too.

I just had simple fruits for dinner. It will surely cleanse my system and I'm okay with that.

FISH PEPPER SOUP




I've been craving cat fish pepper soup and unripe plantain  for days so I decided to cook it today. It's absolutely healthy so no worries.
INGREDIENTS - Cat fish, stock fish, dried fish, cray fish, onions, fresh pepper, fresh tomato, spring onions, carrots, scent leaves and unripe plantain.
METHOD
1) put the stock fish and dried fish in a pot. Add onions, tomato and few scent leaves. Add water and boil.
2) when it boils, check if the stock fish is soft enough, add the grounded crayfish and fresh pepper then add more water and cook more
3) when it's boiled, add the diced plantain. After a few minutes, add the cat fish and let it simmer.
4) When it's cooked, check for salt and add the carrots and spring onions and it's ready to eat.

SMOOTHIE DINNER

I decided to have a smoothie this evening for dinner because I missed it. Smoothie mixtures are endless. You can mix and blend almost anything from fruits to veggies to plants. This was made with pineapple, Ginger, mango,banana,carrots and coconut milk.

BREAKFAST INSPIRATION

Oat meal, banana, peanuts. Simple, fast, filling and healthy. More fruits can be added.

LUNCH INSPIRATION - OKRA

It's not everyday carrot, mushroom, green beans. Sometimes simple okra does the magic.
Ingredients- okra,fresh pepper,tomato,onion,stock fish,chicken,salt.
1) Boil the chicken. Remove the skin before boiling.
2) Add the stock fish when the chicken is cooked.
3) In a separate pan, add a table spoon of palm oil, add the onion,pepper and tomato at the same time. When it's almost cooked, add the chicken and stock fish to it and stir. Finally, add the okra and salt. Cook for just a minute and its ready.
Note- becareful when adding water while boiling so you don't end up with a runny finish.

DINNER INSPIRATION

A simple fruit salad is filling and healthy. Strawberries,mangoes,kiwi,grapes,water melon, pineapple. This can be eaten at any time of the day, as a snack, brunch, pre work out.

DINNER INSPIRATION

Shrimps,grapes,spinach,apples,tomato,avocado,cucumber,carrots,corn. All you have to do is cook the shrimps in onion or any ingredient you want. You can use chicken,fish,Turkey as well. The spinach can be added to the shrimps or made separately.

BREAKFAST INSPIRATION

Wheat bread, avocado, grapes, eggs, tomato, strawberry, Cucumber and tea. #Healthy#.
